Very popular in France, it is a very scarce piece since each animal only has one. Also called onglet or butcher’s steak. It is a cut located next to the kidneys, and though unattractive to look at, it is very tasty, tender and smooth-textured.

STORAGE: Store at -18ºc.
RECOMMENDATIONS: Defrost in the fridge 24/48 hours before use. Always bring up to room temperature 1 hour before cooking. A highly prized, tasty cut. Trim out the central tendon and make smaller pieces or grill whole or barbeque very hot for a very short time.
