The tail of our oxen weighs between 1.8 and 2.4 kg and is delicious stewed. Hand cut on the joint. It is high in collagen, which makes it very smooth in the mouth and allows us to shred it and make it into many different dishes.

RECOMMENDATIONS: Defrost in the fridge 24/48 hours before use. Remove from vacuum packing 2-3 hours before cooking. Perfect for making a traditional stew with red wine, or shredded and used to make fillings for pasties, in rice dishes or even for pasta. Very versatile.
